Kristopher and I were lucky enough to go out to CA to visit my dear friend Kelli and her husband Ramiro last summer. Ramiro's mother Chella, is a wonderful cook and made us Mole, a mexican dish,while we were out there. It was amazing. When Kris' 32nd birthday roled around I asked him what he wanted to do. After much thinking he decided I should make him Mole. Mexican Queso Fresco, tortillas, guacamole, and a chocolate torte (from Trader Joes -thanks Kelly B.) rounded out the meal. It was quite a process to make but here is the end result. (thank you Chella, I couldn't have done it without your recipe!!!)
